Thanks to all who commented on my posts today and for all of your tips and encouragement. I’d love to hear more about why you became a vegetarian (if you are one), and what have been the best and worst things about doing it veggie-style in your own experience. Day 3 is “The Day I Went Shopping.”
I bought a ton of stuff at Whole Foods tonight after work (nearly $60 worth of food - not cheap, but nearly more than I could carry, and it’ll be worth it, I think). I got fruit and veggies and beans and some pita and hummus and goat cheese and feta and gouda (can you tell I really like cheese?), and what looks like it’ll be a delicious carrot and ginger soup, among other things. Mostly stuff I can just eat without having to cook, which is a big deal.
But what did I eat today? Well, here goes:
Meal One:
- Small coffee
- Croissant
Meal Two:
- Grilled Tofu wrap (with baby corn, cucumbers, lettuce, broccoli, carrots, peppers, and sesame ginger sauce
- Grape juice
- Small bag of pretzels
Meal Three:
- Homemade bruschetta with gouda, sliced pear, and a coco/hazlenut spread
- Mixed (fancy) greens with (more) pears and feta cheese and fresh ground pepper.
- Water
Other:
- Glass of Coca-cola (Once I finish the bottle, I’m done with this.)
- A few Reduced Fat Sea Salt Ruffles (Really, just a few.)
Not bad, not bad. Felt a little hungry at odd times today, but otherwise feel good. And the food was tasty. Especially the bruschetta I made. Mmm.
Anybody have a good recipe for Red, Yellow, and Orange peppers?

It's good to see someone was inspired by Alicia Silverstone's naked PETA ad! Haha. As a pseudo vegetarian I can actually give you several tips (brace yourself):
I swear by Morning Star Tomato Basil Pizza veggie burgers. Every time I cook them the roommies drool. Easy, microwaveable. Delish.
I like cooking with extra firm tofu too. You can go stirfry with a bag of frozen veggies and teriyaki sauce to give the tofu flavor. Throw it in a pan, heat, cover, eat. Easy.
I also use tofu as a meat substitute for pasta (a little odd, but I like it). Saute fresh spinach with olive oil until cooked, throw in cubed tofu, add some balsamic vinegar to flavor tofu, some sliced red peppers and tomato sauce. Then pour over cooked pasta of your choice.
You might want to consider eating some (gr)eggs too for added protein. Black beans and mixed nuts would help balance you out too.
It actually sounds like you could stand to eat a little more to keep your metabolism up during the day. My snack of choice is baby carrots with hummus. Sliced red peppers go great with hummus too.
If you've got a blender, I have a pretty tasty fruit smoothie recipe I could pass along as well. But I think I've given you a mouthful at the moment. Good luck!

I wish I could say it was the PETA ad that inspired me, but since I didn't see it until after I decided to go for this, we'll just credit it with "motivation."
Tragically, I can't snack at work, which is why I tend to have a quick energizer when I first get home. The timing of my meals is all imbalanced, sadly, because I have a relatively early (and as you know, extremely short!) lunch. But carrots and sliced peppers and hummus...hotness.
