It’s hard to visualize what a vegetarian diet looks like, if you’re not a vegetarian. For a 1200 calorie a day diet, you could eat five servings of grains (bread, cereal), three servings of vegetables, two pieces of fruit, two servings of dairy products, and five ounces of beans, nuts or eggs.That’s only 1200 calories, apparently. I can not imagine eating that much food. Then again, I must be, which is worrisome. How many servings are in my servings? How many bananas are in my banana? Part of the difficulty of maintaining a healthy vegetarian diet is fighting against years of the wrong habits. Not counting servings. Not paying attention to calories or fat content. Just eating. Chomp chomp chomp.
I’m trying to beat it.

It's a common thought that it must be easy for vegetarians to be thin and healthy. That's far from true. Many vegs eat far too many grains and far too much sugar and fat. (That's true of meat eaters as well, I should point out!)
For example, if cheese and nuts are used as the main source of protein often, that's way too much fat. Variety is key. A little of this with a little of that.
A key to point out is that WHOLE grains are what vegetarians need to eat. The only way to make beans or nuts or the such into a comnplete protein is by combining them with whole grains.
Kathleen - these are some really great tips (and the ones on my pizza post, even more so). Thanks so much for taking time to impart some great knowledge. I've definitely started to go through some of your recipes to find some that will work for me. So much sounds really wonderful.
